Fructooligosaccharides (FOS) are short-chain, non-digestible prebiotic fibers composed of fructose units linked by β(2→1) glycosidic bonds, typically with a degree of polymerization (DP) of 2 to 5. They are naturally found in various plants including chicory root, Jerusalem artichoke, onions, garlic, bananas, and asparagus.

 

FOS is moderately sweet with a clean, pleasant taste profile and no bitter aftertaste. It provides approximately 1.5-2.0 kcal/g and has a very low glycemic index (GI <10), making it suitable for diabetic and weight management formulations.
